Puerto Rican Pasteles
Puerto Rican Pasteles are a traditional dish typically served during the holiday season. These delicious parcels are made from a mixture of root vegetables, such as yuca (cassava), yautia (taro root), and green bananas, mixed with sofrito (a flavorful blend of onion, garlic, peppers, and herbs), and stuffed with a variety of meats, such as pork or chicken, and olives. The mixture is then wrapped in a banana leaf and tied with string, and boiled until cooked through.Although high in carbohydrates, pasteles are also high in fiber, vitamins, and minerals, especially vitamin C, vitamin A, and potassium, due to the inclusion of the root vegetables. However, the inclusion of meats means that they are also high in protein and fat. Overall, pasteles should be enjoyed in moderation as part of a balanced diet.
